Our meal for tonight was supposed to be roasted chicken and quinoa tabbouleh, but we forgot to defrost our chicken overnight. So Jon called me while I was still at work today and suggested we go out for some pho at our favorite pho restaurant, Pho 88. I have never and will never for as long as I live turn down pho, no matter that I am trying to eat less calories, less sodium, organic meat, etc. I have morals, after all!
I won't bore you with more pho-tos of pho (only some bad puns) because I have already done that twice. That wouldn't be very pho-nny. Actually, what's really not pho-nny is the bad puns. But tonight's photo does require a back story.
My favorite part of pho is the lime. For my pho to be perfect, it has to have the juice of nearly one whole lime. Really. I'm sure normal people would pucker just at the thought.
On one trip to Pho 88 awhile back, they informed us that the cost of limes was rising, so they were serving lemon slices instead. While the difference was noticeable, it wasn't catastrophic and I still enjoyed my dinner.
However, my sweet husband made this little care package and presented it to me as we headed out to dinner tonight.
One whole lime, on ice.
