Salad Dressing

The other day as we were cleaning out the refrigerator, we noticed that 4 of our 5 bottles of salad dressing (why do 2 people need so much salad dressing? I have no idea!) had expired, so we threw them out. I've been wanting to make my own salad dressing for awhile now, but hadn't given it a try yet. I figured this was a good time!

One of our absolute favorites is Green Goddess. Neither of us had discovered it until we were married, but it is SO DELICIOUS. It's taste a bit like Ranch. At least, the store bought version does.

We decide to make our own today, so we stopped at Publix on the way home from work (Jon worked at a school just a minute from mine today, so we rode together. Those are my favorite days!) I found a recipe for it, but it only made 6 servings, and us, not having any concept of when enough food is enough, decided to triple the recipe. I will post the recipe so you can see what is in it, but I think we have probably the most expensive tub of salad dressing ever sitting in our refrigerator right now. At least it's heavenly!

Here's the recipe I used, found on allrecipes.com:

2 cups mayonnaise
4 anchovy fillets, minced
1 green onion, chopped
2 teaspoons chopped fresh parsley
2 teaspoons chopped fresh chives
1 tablespoon tarragon vinegar
1 teaspoons chopped fresh tarragon

Then just mix it all and chill it. We put it in the blender because neither of us felt like chopping (18 kids, give or take a few, make you tired, ok??).


Our ingredients. I'll be honest, anchovies don't really excited me. But this dressing is so good that I can deal with it.

Because we tripled the recipe, the blender was seriously full with 6 cups of mayonnaise. To be quite honest, the process of making this dressing was kind of nauseating, what with 6 cups of mayo and 12 anchovies fillets being put into a blender, but seriously.... major goodness.

We also made spaghetti and meatballs (actually, I had nothing to do with this... thank you, honey!). What a delicious dinner.

So even though I am making fun of us for making so much salad dressing, I don't mind. This salad dressing was better than any other salad dressing I have ever had. I had half a cucumber while sitting at the dinner table, dipping it in the dressing, just because. Even if it doesn't sound very appealing to you (the ingredient list doesn't necessarily sound that appealing to me), I encourage you to make it. You will not be disappointed!
